From stereo audio to mono audio using only one channel from original

I have this sound track with one language on the left channel and the other on the right channel, I would like to get rid of one of them and then encode it into a mono audio track, how can I do that?

Use WaveLab for example. Select only the channel you want, copy it to a new window, then save it.
