Converting to a DVD from vcd i often get a jerky picture, both in pal & ntsc, do i up the bitrate by how much & can i preview what it wil turn out like ?

:confused: You convert a VCD to DVD? How does that make sense? You won't get better quality, of course.

Vcd to Dvd (compilation) i am leaving them as ntsc (although pal is sometimes the same) Of the 4 vcd's i have converted 1 might be jerky, like every second, i have upped the bitrate to a ridicculous amount (like 1/3) with good results, but surely this cant be the answer

I used to have the problem i think you're having. If it skips every second its usually because you are converting a video stream into one with a higher frame rate eg a 23.97fps AVI into a 25fps MPEG (the extra frame causes the skip)
I used to download DivX files and convert them to PAL VCDs and got a tiny annoying skip every second. Check the properties of you movie and make sure your encoding to the same frame rate as the source
