changing audio level?

I'm still a reltaive newb to all this--I've successfully backed up 4 dvds to this point. What is confusing is why some movies turn out with really soft volume levels, and others don't. Is there a way to adjust the volume before encoding?

I am using GKnot and the DivX 5 guide from doom9.
