id say use either DVD Maestro or Scenarist..those are my picks..good luck.. read the Authoring guides for each and determine which one suits your needs..for basic stuff id say Maestro is good but ive found that Scenarist is actually quite easy to use for the basic movie backup.

i use scenarist and you simply import the video/audio files and make your tracks and layout and it creates the IFO and VOB files for you. not too hard if you follow the: ifoedit & cce guide (http://www.doom9.org/mpg/ifoedit-cce.htm)

If all you want to do is multiplex a video and ac-3 track, SpruceUp will be a good option for you. Yes, Scenarist is an excellent piece of software, if you can get your hands on it, it takes some time to learn it, but when you know it, it's almost as fast as using Spruce Up. However, if you are not intending to add subtitles to your DVD's or any advanced menus, SpruceUp will do the trick, and is very easy to learn. Give the .ac3 and .m2v track the same name (ie, movie.m2v and movie.ac3), bring up the Film tab in SpruceUp, right click, Add Clip, select movie.m2v, and it will load up both the video and audio.. then just drag and drop the clip on the first frame at the bottom, and then you can export the project. Very easy. It's also very easy to add a couple of chapter points if you want to (just right click on the clip and select Clip Properties).
