I haven't tried using OGG Vorbis with my DVD Rips.
But I am going to try today.
Can anyone tell me what I do at the encoding stage.
Do I select the ogg file for the "Audio Source File" ?
If so, do I also select "Audio-Processing Disabled"
If Not, how does GKnot re-calculate the bitrate when
encoding the movie (to ensure that when the video is
mux-ed with the audio it is not too big).

Gknot cannot do this automatically, you'll have to do a bit of work.
You cannot mux an Ogg Vorbis audio file into an AVI. It will not work correctly. You must make an AVI video stream and then mux that with an Ogg vorbis audio stream into an OGM container.
Read the Ogg audio encoding guide as well as the Ogg media stream creation guide.
Basically, create the OGG, enter that filesize in GKnot's Audio A field, choose "no audio" in the AVI overhead section, encode the video, then mux the OGG and the AVI together with OggMux.

Ok..previously the reasons I heard for not incorporating ogg/ogm support were that it was being updated to often (it now has an official 1.0 release) and the volume of work required to support it...now correct me if I'm wrong but besweet appears to allow creation of an OGG as opposed to a mp3 with the appropriate parameters...so an additional menu option would allow the creation of the sound file...now muxing it together...calling oggmux instead of nandub at the end to add the sound to the video? The changes seem minimal...and people have inserted addon's to the process such as being able to set the parameters for the divx5 encoding prior to calling virtualdub....what am I missing which is keeping support from being added?

I read the sticky...what does that have to do with a technical discussion of what HAS to be done? As I mentioned...several addons have already been written for gknot that were NOT written by thewef.
I guess the simple answer is I need to try some OTHER programs and find one that is open source so I can code the changes myself.

so an additional menu option would allow ... I guess I misunderstood, and thought you meant changing GKnot.
The add-on software I know of, such as divx4log and AviSplitCalc, are not part of Gknot.

DVX is GPL, currently it supports DivX4/5 and XviD, to add a video codec is done in less than 60 Minutes, unfortunately there is no other good codecs to add. DVX supports OGM and BeSweet, Head2AC3he or whatever commandline encoder you prefer to use

so only muxing is left as yet-to-be-solved issue.
