why would you want that??.. cant you just burn the subs in the videostream?

Burning subtitles into the video means that you will never be able to play it dub only. some people like to have the option to play it dubbed, but prefer it subbed. Also, burning subs into the video in my experience causes a slight drop in compressability. You save bits by extracting them.
