Encoding/Decoding Dolby Surround

Hello,
I'm looking for some technical details on how to encode multiple sound channels into a Dolby Surround-compatible stereo audio stream and, what is just as important, how to extract the individual audio channels again. Does anyone have any hints?

To encode the multiple waves to ac3, I would use soft encode. It's sure and a good standard to get what you want, with all the options. If you want do decode them to seperate waves again, I would use besweet. It's fast and does a great job.
