It depends on your content. There is no one single best way, or best filter setting...with one exception: Force FILM in dvd2avi, when it can be used.
(Telecined content typically will have 2 out of 5 frames with interlace artifacts. See www.doom9.org/synch for the gory details.)
For standard telecined sources that have the fields marked correctly in the mpeg2 metatada, Force FILM will work faster and better than any other method that blends fields, since it removes the "extra" frames added by the telecine process.
Gordian Knot at release 0.26 has two AviSynth filters which can do IVTC: The Decomb suite, and GreedyHMA. Decomb is used by default.
You'll have to experiment with different filter settings to see what works best with your particular telecined content. Luckily, that's very easy to do: you can edit your .avs scripts to change settings, then preview the results prior to doing any encoding.
You'll find documentation on both Decomb's Telecide/Decimate filters and GreedyHMA in your ../Docs folder.

How can I check the fields marked?

Preview (F5) in dvd2avi, and examine the metadata report in the statistics window.
For details on what the metadata can show, see Hakko's comments in this sticky thread: http://forum.doom9.org/showthread.php?s=&threadid=23776
