Check the DVD guides (http://www.doom9.org/mpg/dvdr-guides.htm) on this site. There is tons of info on DVD authoring.

If you wish to keep the extras then the best method is explained at http://www.doom9.org/mpg/ifoedit-cce.htm . This guide uses CCE, Scenarist and IfoEdit. You could also use Maestro instead of Scenarist. I highly recommend CCE. If you use it you will understand why. there is a good guide for CCE at http://www.doom9.org/mpg/cce-advanced.htm .

I am new to this field as well and I must say that certain aspects of that guide are not clear(i am reffering to the IfoEdit & CCE guide and not the Getting the best out of CCE guide). I am a bit confused on how to handle separate Vob IDs as i mentioned at a different thread. (http://forum.doom9.org/showthread.php?s=&threadid=28584)

If you find the whole process too time consuming or complicated then you can follow the IfoEdit guides, and learn how to strip the DVD down to the required size or even split a DVD into 2 DVD5
