Some DivX HowTo's suggest using Graphedit to extract WAV audio from VOB files after DVD extracts only the video. Is there really any advantage to doing it that way rather than letting DVD2AVI extract the audio as well?

all the guides are influenced by the person who wrote it. graphedit used to be state of the art a while back but these days a majority of people on this board use azid to decode the ac3, mostly as part of the BeSweet or HeadAC3he process which both integrate ac3 decoding via azid. The advantage of these two programs is that you can get direct AC3 -> MP2/MP3 conversion without intermediary files (as you would get when using dvd2avi) plus they work in the floating point space which results in better quality (graphedit allows direct ac3 -> mp3 conversion but everything gets converted to ints, and there's no mp2 output).
