Could I capture video like this:

Ok, I have digital cable, and on the box there is a video out and audio outs... I was wondering if there is a program for the computer that could capture it like a normal VCR would, only it would be in real time? I have a capture card and all. Also, could I capture it without the 20 minute time limit of the capture? Hard to explain hopefully you'll understand...

Assuming your capture card is compatible with the format coming out of the box, and that it can overcome Macrovision, if enabled, then there is no reason why standard capture software would not do the job for you. Without more details from you, it is hard to say more.
