Hello, it's the first time I use vapoursynth in linux (I am on archlinux), do you know if there is a way to pause and encoding when I have to shutdown the computer and continue the encoding next time?

Easiest way to accomplish that is to break the encode up into chunks and then merge the chunks afterwards.
Av1an is a fairly popular way of achieving that.

I believe that you can config linux for Hibernation (save machine state and closedown, and boot & resume from that saved state).

I often use hibernation under windows, but not in linux.
I have 32GB ram, and 32GB swap partition (default in mint ext4 now is to create a swap file inside system partition,
but at end of system partition, this causes Macrium Reflect to fail on restore as there seems to be some sort of
mismatch in the number of blocks in system partition, and Macrium {helpfully fixes mismatch ie} makes changes which break linux boot).
I think I'de need 32GB + 32GB ie 64GB hibernation file/partition (32GB RAM + 32GB Swap) to have bullet proof hibernation for my system,
maybe one day I set it up, but not yet.
[FoxClone is a nice linux ext4 based live CD/USB replacement for Macrium Reflect, which does not suffer from the same problems,
Also works with FAT32 and NTFS]

Windows, Amp Winoff is old program which works just fine on W2K/XP/W7/W10 (W11 unknown), it can shut down or hibernate
on multiple triggers, eg CPU usage falls below a certain threshold for so many seconds.
(most programs that claim to do similar measure USER activity, ie mouse/keyboard, which is almost useless in comparison).
Very handy program under Windows.
[I choose Hibernate when all programs completed, ie CPU below eg 3% for 30 seconds, for weaker machines use maybe 10%]
