I captured the video using a Magewell Pro Capture HDMI 4K+ adapter using VirtualDub2 build 44237. The video colors look correct in Overlay mode. I capture to an AVI file setting the format to P210. When opening the file in Virtualdub2, it is detecting in the Decompression format P210-709, but the colors are not right. Any ideas on what's going on?

How are the "colors are not right"?
You expect colors to be slightly shifted because vdub uses rec601 for the RGB conversion for it's preview by default. The actual underlying YCbCr video is not affected , unless you do something (e.g. apply a RGB filter) that actually requires a conversion to RGB
If you want to preview what it would look like for a 709 preview, add the "alias format" filter . Don't forget to disable it when actually using vdub2 for encoding

This is suspicious, the AVI output from capture never included any color properties, moreover it is never detected from capture source as well.
And the AVI decoder does not detect colorspace too. Maybe you just have the "709" preference in decode format turned on?
