I searched a lot, but still have to find out a document about technical data compliance - like resolutions, bitrates, codecs etc.

I know that, for UHD, HEVC 10bit is used, but I'm curious to know if it's possible to use also HEVC 8bit or even AVC 8bit.

Only HEVC 10 bit is possible for UltraHD resolution. (1080p+AVC are allowed on UltraHD BluRay e.g. for extras)

So to have a shortcut:
One can encode/mux MPEG-4AVC 8-bit into UHD-BD if content is SDR 1920x1080x23.976 or 24.000

Table 2-2 includes HEVC and MPEG-4AVC for primary video streams.
Table 2-3 restricts use of MPEG-4AVC for 1920x1080 @ 23.976 and 24.000 fps only.
Paragraph 3.9 (Page 41) specifies MPEG-4AVC as valid for SDR.
