the "coder" option for libx264 has two unknow arguments for me

-coder ac
-coder vlc

what is the (quality) difference with cabac?

"-coder ac" is CABAC (ac stands for arithmetic coding, just like the ac in CABAC), "-coder vlc" is CAVLC, they are not any new modes.

These options are provided for a "unified" option scheme across varying ffmpeg encoders, where having a vlc-based encoding and an arithmetic-based encoding are often typical options.
