I'm using Aja Kona LHE Plus and Medialooks Direct Take to capture some Betacam tapes in Prores format. Mediainfo reports the scan type as progressive, I can see field lines. How do I set the scan type to interlaced to get rid of the field lines while viewing?

I'm sorry that no one has answered your question. I don't know about these particular programs, so you might be better off finding forums which deal with those programs. You can try

As a general rule, if your software can't fix the problem on capture, there's probably someway to re-encode or flag the result after the fact. ffmpeg can probably do this for you. Another option is to use a deinterlace option in the viewing program. Try VLC or MPC-HC.
I could probably test various options for you, but you'd need to post a short sample for me to verify.
Happy holidays.

Your clip is telecined, not interlaced.
You can IVTC (inverse telecine) it to obtain clean progressive video at 23.976 fps
telecide()
tdecimate()
