Sorry if this has been asked before, but I did a search and could not find an answer.

I make almost exclusively MKV files, and use the Alternate Movie Only Output.

I am guessing that it means this:

7=No resizing
Keep the video format of the source video, in other words, if the original is 720p, than keep 720p, but compress video to make the file size smaller (example, if you were using CRF=23)

8=Intact
Do not modify the video in any way - Keep video format the same, and do not compress.

Am I close?

Exactly.

No resizing: reencodes using the parameters that have been set. But it keeps the original picture size.

Intact: Keeps the original video. No reencoding, no size determination, nothing. It just remuxes the existing video into the new container.
