How can I learn a background knowledge for encoding?

I'm newbie about encoding. There is many difficulty to understand about encoding terms or video knowledge. Actually I'm not major in those. Are you recommendable to me something like book or guide based internet?

Try using MeGUI. It uses all the standard tools for indexing and demuxing etc and it creates Avisynth scripts which are easy to view. MeGUI also makes it easy to manually modify scripts and preview the changes, so once you've mastered using MeGUI itself, it can be a way to ease yourself into more advanced stuff (in respect to Avisynth scripts and filters etc).

Maybe you tell us a bit more what you want to use the encoding for (source, target ...)
If you want to encode BD or DVD for your Mobile for example you may try Handbrake (http://handbrake.fr/) which also includes a nice User Guide.
In case you speak German there is an excellent tutorial written by Brother John (http://encodingwissen.de/).

my suggestion is to use something easy like Vidcoder and then after you get used to the options and terms used in encoding move to something far more robust like MeGUI or Hybrid
