When converting dvd's to the standard 1136 x 640 resolution on the retina display, which mode should I choose?
Using dvd-rb pro
- 640x360
- 1280x720

First, I'd recommend you use BD-RB rather than DVD-RB for that kind of backup, it uses a better encoder. BD-RB can import DVDs as input and create MP4s for you -- and its free. Even if it ever went to a Pro version (which isn't the plan) -- any DVD-RB Pro user would get it as a part of their VIP status.
Within BD-RB I'd recommend 1280x720 using "iPad 2+/iPhone 4s+, 1280x720, 128Kbs AAC". 720p is a standard resolution and that way any MP4 files you create can be easily used as input to other players. Also, the "iPad 2+/iPhone 4s+" settings take advantage of capabilities in your iPod Touch that isn't there in earlier models -- and you'll get a much smaller file with the same quality.
