My question is if there is any way to reduce the quality of the extras of 1080p to 720p so they take up less space and have more the movie.
And, any way to keep the HD audio only from a track, not to remove it all, or leave it all is there.

1. You can reduce the quality of the extras by inserting
QUICK_CRF=xx (xx for example 28)
as hidden option in rebuilder.ini
and selecting "Quicker Encode for Extras" in the Mode menu.
and/or
2. In the AVS Filter Editor, insert the filter
e:r:spline16resize(1280,720)
under Settings->Setup->Use AVS filter during encode.
The e: prefix means that the downscaling will be applied to the Extras only
The r: prefix positions the filter after any other resizing you may have selected.
I didn't try 2. yet, it's just an idea.
Edit:
Caution! Method 2. works only for 1920x1080p (progressive) Extras. Unfortunately the Extras are often interlaced 1080i (or 480i, 576i), means that the simple forced resize to 1280x720 may mess up with the interlaced source, and/or the 1280x720 encode may get flagged with the wrong --sar.
