I think this free online course at Courseda, Image and video processing: From Mars to Hollywood with a stop at the hospital (https://www.coursera.org/course/images) from the Duke University, may be interesting for people in this forum.
It doesn't go very deep in any particular topic, but it will help you to better understand video compression and filtering, if you are not already an expert on it. IMHO it's well worth the time.
Note: As the course is ongoing at week 4 it's a bit late to get a "Statement of Accomplishment with Distinction" in this iteration, but you still can get a "Statement of Accomplishment" if you wish.
