Hi, tell me how to remove the information from the MP4 that can be obtained in mediainfo, in particular, the encoding settings.

That info there on purpose. It is harmless and shouldn't be removed. Also you probably talking about h264 so they are part of the video stream and not related to containers.

I didn't said it can't be removed or that there is no way not to write it to begin with. I said this shouldn't be done. There are no reason for you to remove it. But it you think there is, I can tell 2 not so simple ways to do so:
1) create patch for x264 so it won't write this info, then compile it yourself.
2) hack your media file with hex editor.
should be no problems for experienced user. If you are not experienced user, I can say it again - there is no reason for you to remove this info.

You can also use this tool (http://forum.doom9.org/showthread.php?t=152419) to remove SEI data. But as Keiyakusha said, there's no reason to remove that info.

EDIT: And if you intended to keep your encoded MP4s for yourself, why would you bother to remove that info?
