Which might yield better results -
--me umh --subme 10
or
--me esa --subme 9
Both are similar as far as encoding time, with esa + subme 9 being slightly slower.

The easiest way to tweak "speed vs. quality" with x264 is the preset system. And it should give you a good hint on reasonable parameter combinations:
For example "--me umh --subme 10" is used in the "very slow" preset , while there is no preset that uses "--me esa".
(There is a preset that uses "--me tesa", but that one is called "placebo", so it should be clear that you don't want to actually use these settings ^^)

Yes, and I have. I can't tell a difference. But inquiring minds want to know. ;) People come to forums for a reason: to ask the experts. I'm not an expert, so I thought I would ask.

Your question was "Which might yield better results". This is quite vague and the results depend on the source and your personal perception.

--subme 9->10 is probably more useful. This is why, in the slow presets, --subme 10 is enabled before --me (t)esa.
