So, anamorphic widescreen DVD. MeGUI detects it as "ITU 16:9 (1.823169)". Looks about right.

But I cropped from the sides. So now if I set that aspect ratio (in MKVMerge or whatever), it will be wrong, won't it? Too wide?

I am very confused about ARs.

Yeah, if you set the DAR to 1.823169 (which is totally right for ITU 720 horizontal pixels), and crop horizontally only then the playback will be steched too much (wrong aspect ratio, too wide).
That's why you should use PAR (Pixel Aspect Ratio) instead of DAR (Display Aspect Ratio).
If it's a PAL 16:9 source set the PAR to 512/351, if it's a NTSC 16:9 source set the PAR to 5760/4739 (yeah, the numbers are pretty accurate).
