What is the rationale for choosing a specific resolution from blu rays? We take a 1080p source and most often encode it to a 1280 x XXX. Should we choose a resolution that we are most comfortable spending the time and bits on or is it best to stick to the 720p resolution that seems most common (for whatever the rationale currently is)?

As far as I know, the most common approach is to simply backup your original BluRay discs in their original 1920x1080 resolution (Compresed or Uncompressed)...

What is the rationale for choosing a specific resolutionIt's whatever your target playback device/methodology and/or display require.

Exactly. The rationale in my case is for example that my projector supports natively 1280x720 maximum, hence there is no benefit in spending bits and encoding time for a higher resolution.

I thought there might have been a more standard answer but as I can see the rationale is whatever you'd like it to be :).

Thanks guys.
