@Willis
Jdobbs has done a pretty good job at making DVD Rebuilder useful "outta the box." Keeping everything at defaults, selecting a source, X-ing out the audio you don't want to keep, and selecting a target folder should pretty much be all you'll need to do. Is there something specific you're looking to do? I guess what I'm asking is... when you insert your backup disk and play it back, what do you want to happen? If you're wanting a full-disk backup that looks and behaves like the original, sticking to defaults will get you as close as possible.

Does it let me remove the foreign audio and subtitles?

Yes, it does. All you need to do is double-click whatever audio or subtitle stream you wish to remove, and you'll see a red "X" which indicates this item is to be removed. One word of caution when it comes to removing subtitles, however: Some movies rely on subtitles (whenever someone is speaking in a foreign language, and subtitles translate what's being said, for example), so make sure you're not going to remove anything you're going to need. Since subtitles don't take up much space, you won't be losing anything for keeping them.
Are you using the free or the pro version?
