I've been using a couple of different tools from here (ClownBD, HDConvertToX, BDRebuilder, eac3to) and have learned quite a bit, but I'm still unclear on a lot of things (I think/assume).

I am reading quite a bit on these boards, but I was wondering if there are any sources or references for learning more about the technical basics of audio/video. Things like typical sources (Broadcast TV, Cable TV, DVD's, BD, Camcorder) and how they are constructed; Common methods of converting; Common destinations (can't think of another way to say this) for conversion;

Hopefully, presented in a manner that is not too deep.

This may be too broad of a topic, and if so, that's fine. Any guidance or information is most appreciated.

Try wikipedia.

However, learning all the items on your list would take a while and you'll probably become more confuse - take one step at a time. In a logical way.

Let's assume you want to convert a DV tape to DVD. You can connect the camcorder to the DVD recorder and press REC. Or you can do this on a PC, so you need to learn about DV first, then how to capture through FireWire, how to set CCE/HC/ffmpeg/TMPGenc etc., how to author an 1click DVD then how to burn a DVD.
Then you can go deeper:
-which DV codec
-avisynth scripts
-advanced CCE/HC etc. settings
-what are VOBs, PGCs, IFOs, VOBUs etc.
-how to set up imgburn, nero etc.
provided you learned the basics before.
Or even deeper:
-advanced avisynth scripts and settings
-DVD commands
-etc...

Then you can address another item, eg TV broadcast. Or satellite, or VHS.
