DVD Over 120 Mins

I have read dooms guide about menu stripping a DVD to fit onto a DVD-R and found it really easy to do and follow. I like the way it keeps the original 6 channel sound, but is there an easy way to do the same on a DVD over 120 mins and keep the 6 channel sound??
