Seriously I couldn't find anything on here which could help me out.

I need to extract all 3 streams from a standard DVD.

I know it works with DVD Decryptor, but it puts out one ac3 file per chapter and I need to have one big file!

So basically I'm looking to extract the 3 audio streams to 3 seperate ac3 files, no re-encoding, same bitrate and channels, just extract them.

Load the VOBs into DGIndex and then demux the audio streams (see users manual).

You can disable splitting by chapter in DVD Decrypter by right-clicking on your program chain in the main window and setting "Splitting" to "None".
