Arduous task of bringing DVD collection online

I am planning on taking my entire DVD collection (~300 movies or so) and backing them up to a NAS for jukebox playback via the Popcorn Hour media streamer.

The vast majority of my experience is backing up HD DVDs and BDs so I am used to involved time consuming processes of ripping, demuxing, encoding, remuxing, yadda yadda so I would love some suggestions on how to make this as painless as possible simply due to the number of movies. I have also been out of it for a while so there may very well be new handy tools I am not aware of. I already have AnyDVD so I can rip them to the hard disk as an interim step if needed. I would really love to go from DVD > mkv (h.264 / DD / DTS) with as few steps as possible and the maximum retention of quality. What are some of your suggestions?

You may want to look into programs such as Ripbot, Autox264, MeGUI, and Staxrip. All of these will automate most of the process for you, and MeGUI even has a One Click encoder. You just set your desired profiles for video and audio, point it to your dvd files and go! Pretty darn easy. It even comes with predefined and self-explanatory profiles for you to use, so no guessing which settings are "good".

Or create your self a batch script to cycle through your ripped movies using mencoder or x264... this would be my route.
