Hello,
I'm looking for a mkv profile convert tool. I want to convert a 5.1 profile movie to a 4.1 profile movie. What is the best option for this ? Or must I re encode the file with RipBot or MediaCoder ?

I assume you mean the H.264 level you want to change. If you are sure that the bit stream already complies with the level you want to specify, just set the corresponding bits in the sequence parameter set in the file accordingly (refer to the standard for the exact position) - I don't know of any tool capable of automating this.
If you are unsure whether the stream complies with the level you want to specify you probably will have to reencode it, but be aware that there may be drawbacks in quality.

tsmuxer allows changing the level. Although it muxes to .ts You would need to remux to MKV if you wanted.

Mp4Muxer can change this lv too when you mux itomp4.

btw, there's no best as per forum rules and those muxers wont "convert" the level... they will just change it.
if your original source doesnt fit the level 4.1 it wont be able to be played back in 4.1 hardware players.

if you got the bitstream use h.264 info.
It'll change the flag, however if the bitstream had for example more than 4 ref for 1080p, you'll need to do an entire re-encoding...
