Any special suggestion or consideration in order to encode a B&W movie with megui and H.264 ?

Is there any benefit to what was suggested as opposed to just leaving it as is? In other words, is the picture better because less information is taken up by the color? How about a movie that has both color and black and white? For example, the beginning and ending of Schindler's List is color, but the vast majority of the movie is black and white. Presumably setting the values suggested would destroy the color information. Sorry if this is severely lacking in technical jargon.
