I have a few episodes that are about 1.5GB and they are in separate folders as VOB files. Is it possible to convert each of them to "one" file like .mkv or .mp4? I don't want to do any encoding or transcoding, I want 100% of the original just in "one" file.

Want to elaborate on what you would like to change the extension to?
As far as containers are concerened VOB and MPG are very similar, not the same but close, so you can change the extension of a VOB to MPG and it will work in most players and video editing apps.
Changing the extension of a file does not change its file format, ie if you change VOB to MKV it is not a MKV now, it is still a VOB, just with a different file extension and some players will probably spit the dummy as the extension says MKV but the header's don't say the same thing.... same with VOB, if you rename the extension to MPG it is not a MPG container it is still a VOB, just with a different extension.

All changing the extension will do is change the program with which the file will open when you double-click it. It does not in any way affect the file.
The link mikeytown2 provided should get you to something that will do exactly what you wanted.

Can anyone explain what are the differences and what sort of problems could you get doing this in practice?

@Gavino
Hi!
Can anyone explain what are the differences and what sort of problems could you get doing this in practice?You may have to reset the timestamps ("MPEG2Cut2.exe" appears to handle this well)
There's also the odd chance that you'll discover that the first audiostream in the .VOB in not the language that you expected (This can, likewise, be taken care of with "MPEG2Cut2.exe")
