Was searching Google for stereo to multichannel audio up-mix guides and what not and came across a rather interesting website.
It has lots of information about Dolby Pro Logic II, AC-3, and DTS audio encoding; it also has sound samples from each format allowing for comparison. Looks like the work was done with his list of plug-ins.
Worth checking out I'd say.

For those with 5.1 setups, the "Dolby Digital Encoded - Ambient Music (AC-3 5.1 Surround @ 48kHz/16-bit)" sounds amazing. :)
