Multiple video and audio streams in 1 .mkv

I would like to put multiple video and audio streams into a single mkv file. If possible, I would like to be able to just put m2v and ac3 streams into the mkv at perfect quality from dvds.

What is your question? Is that possible? Yes, that is possible. How do you do it? Use mkvmerge. How do you get the MPEG-2 video? Use DGIndex or perhaps ffmpeg or mencoder or mplayer. [EDIT] Actually, you can just use the decrypted VOBs in mkvmerge so no demuxing is required.
