x264 has historically had problems blurring out detail in flat areas of the video. Not anymore; The new Adaptive Quantization works to fix that by moving bits to the areas of the image that need it most. Its on by default--you don't need to do anything! To increase or decrease its strength, adjust the new --aq-strength parameter.
