Hello and Welcome to the forum!
Make sure you've read the forum rules, specifically about asking what is "best" as this is very subjective.
The iPhone has virtually the same Audio/Video settings as the iPod. If you're new to encoding, for simplicity I would recommend RipBot264. Search the forum and you'll find it. It has profiles for the iPhone built in.
