audio encoding for BluRay

What audio formats are you using for Blu Ray Discs?
If I want to use PCM does it have to multiplexed in any way so the channels are mapped in the right way or is this to be done in the authoring?
What encoders do you use for Dolby or DTS?

I use the BSweet/Belight combo for PCM and Dolby/AC3. I don't deal with DTS though.
