Can anyone help me to remake DVD-9?

I have a set of six DVD-9s of music concert.
So I want to re-author them and burn on DVD-5s.
Firstly I wanna get rid of extras like comments. Secondly I want to exclude some parts of it like built-in ads. It takes much space and time. (ads come in middle of VOBs)
Finally I wanna make a compatible DVD with menu.
Could someone advice me what software (freeware is better) to use and how to make it? (step by step plz)
I have experience with Virtualdub but as I know it mainly works with mpeg4.

You can easily remove the adds (including in the middle of a title) and strip the comments with VobBlanker (free.) Guides on site.
