Hello,
I was wondering, when I rebuild an episodic DVD and forget to select the option 'apply redistribution to all VTSs (series), what happens then?
And when I rebuild a movie and I forget to uncheck above option?

AFAIK, in (1) the redistribution goes to the "main feature" (this will be the longest VTS) and in (2) it will be redistributed amongst movie and extras.

It will REDISTRIBUTE the longest VTS, but the others will be handled just as if they were no redistribution. If, however, you've selected some kind of special processing for extras (like reduction) it would apply to all others as well.
In some cases all the episodes are in a single VTS anyway, in that instance it would make no difference.

So if I keep this option always on won't be a problem?

It won't be a problem... but it will also redistribute bitrate across the feature and the extras. That will mean a consistent quality DVD -- but will also override any extra processing you may have done in PREPARE (like reduction). In addition, there is a possibility for bits to be stolen from the feature in order to improve extra quality.
I normally leave it off, and only turn it on for a series disc.
