So I just bought the cheap Dazzle TV Stick (USB) device and installed it on my Windows x64. The driver were no problem as Pinnacle had a beta online. However the TVCenter software appearently does NOT support x64, so now I'm stuck with a working card but nothing to browse channels.

I ran through the guides and tried unsuccessfully a few apps including ProgDVB, but most of the information and apps seem to only support DVB-S.

How do I proceed from here? I'd like to use any software that are able to dump the streams directly.

I just enabled the AF9015 BDA filter in ProgDVB, and it didn't error. However I have still not found any channels.

I read somewhere that symbolrate for my country would be 6875, but it defaults to 7000.

There's no symbol rate in DVB-T.

IIRC ProgDVB actually says symbol rate but it means bandwidth when used with terrestrial receiver.
Depending on your country it can be 6, 7 or 8 Mhz.
