Hello, I can't seem to find a program which can do this (while retaining menus):
I am looking for a program that can recode the audio (and not the video) of a DVD to AC3 (the dvd has PCM audio on it). It is just over the dvd-5 limit, so I think if I recode the audio it will fit on a dvd-5. DVDrebuilder and nero recode don't seem to have an option for this...

I checked the tools I use, none seem to do that. If no one else knows, you may have to extract all the pieces and re-author from scratch after encoding the audio. Ouch. It's not impossible, it just tries my patience whenever I need to do it with (semi-)free tools. The pro edition of muxman or the free dvdauthorgui will probably be of some help.

There was a thread that contained a fairly simple method of replacing an audio track with another one, which should work for your application since you could convert the PCM to AC3 and do the same thing. I was unable to find it again, but it's here somewhere and was within the last six months.

Once you've found the right tool for converting the audiostream (possibly the Belight/BeSweet package, Soundforge, or similar), you should be able to accomplish the replacement by following the information linked to in the following post:

That was the one, setarip_old, though it wasn't as simple as I'd remembered. At least there's a relatively straightforward step-by-step procedure, courtesy of r0lz.
