I have been messing with Nero7 for a while, but I am not happy with a couple of things.
I have noticed a couple of different programs you guys are using, but don't even know where to start with the settings.

What I want to be able to do is keep my dvd rips at there native rez and make sure the converted video has AC3 too. I like with Nero how I can set the rez and desired bit rate I want.

It seems like x.264 is the encoder, but there are different GUI's out there, is this right?

I'd highly recommend Handbrake (http://handbrake.m0k.org/) for someone who's looking to enter into the realm of GUI transcoders for X264 content. For Xvid content, I'd suggest AutoGK (http://www.autogk.me.uk/).

MeGUI and AutoMKV may get talked about more often around here, but they're really suited for people who have more experience with the process of backing up a DVD. With those programs, you can tweak your encodes as much as you want. With a program like Handbrake, you just set a few options, and call it good. After you get fairly comfortable with Handbrake or AutoGK, the other two programs will seem more accessible.
