With the ability to backup HD-DVDs has anyone goten a easy or at least somewhat simple way to back them up to XVID? Gknot AutoGknot? Just curious

There is no one-click solution yet. The only method available is to manually construct a graph however you can, and import that into avisynth with DirectShowSource. Once you've done that, you can encode with any setup you like, such as MeGUI, stax, GK, or whatever. Some will require some manually script editing, some let you add it right in.
I'm sure it won't be too much longer until one-click demuxers and splitters show up; they're in active development already. I'm sure at that point len0x will put some support into AGK.

Are those .evo demuxed vc1 files already usable with directshow ?

Check the VC1/EVOB threads in A/V Containers (http://forum.doom9.org/forumdisplay.php?f=74) (and decrypting will have scattered info on it).
