how to make video convertion in Apple's Operating Systems

If you are talking about general purpose DVD backup, there are several options on the Mac OS X operating system. MacTheRipper is a great dvd decryptor workalike. ffmpegX is a great all in one media encoder/muxing tool. HandBrake is an integrated DVD backup program that I hear good things about. MPEG StreamClip is also a nice muxing/trimming/encoding tool for working with MPEG files.

There's lots out there. The only real thing that Mac OS X DVD backup software lacks is AviSynth, which is a pretty major problem for me.
