I was just wondering if it's better keep the original resolution (DVB captures like 480x480 or 512x480) or resize to something else.

With interlaced content, as long as my video is 480 in vertical resolution, it would matter ?

I dont know if most standalone players use 720x480/576, resampling everything to this resolution or what....

By all means crop away any black mattes. But it's really not good practice to generate re-sized interlaced encodes from interlaced sources at all.

Pure interlaced PAL DVD sources will have a resolution of 720x576 pixels. And pure interlaced NTSC DVD sources will have a resolution of 720x480 pixels

Pure interlaced PAL DVB sources will always be 576 pixels high, regardless of their pixel width count ;)
