Is an HDTV signal receivable via the standard VHF antenna we've been using for years? Additionally, is the coaxial input fitting for this signal the compatible with the traditional 75 Ohm female fitting?

Actually, HDTV is in the UHF band, not VHF. Yes, any "HDTV antenna" you might buy uses F-type connectors.

I am attempting to use a portable NTSC VHF/UHF antenna I bought years ago. How compatible is it with the modern format? Do I need to buy a modern antenna?

Receiving digital broadcasts is very dependent on signal "quality". Using the correct aerial/antenna is only one part of the receiving chain. Using high quality RF cable (which must be foil shielded), with the correct impedance free of sharp bends and terminating with good quality outlets/sockets (and plugs) is very important too!
Cheers
