Add a soundtrack in a different language

I have some VHS tapes with dance instruction and history in Greek. I want to have some one translate the Greek into English and add a soundtrack. Then I will probably convert it to DVD.
Is there any way to record a new soundtrack onto one audio channel of the VHS tape while the tape is playing (without erasing the video and the original audio channel)?

IIRC VHS tapes only have 1 audio track (containing the 2 usual stereo channels). You won't be able to do that at all.

And even if I were wrong, I dunno of any device capable of such a thing (professionnal studio hardware maybe ? not even sure about that :/).

The very best you could do would be to copy the tape while overwritting the audio track.

But since you're going towards DVD, I suggest you record your VHS tapes to something on your hard-disk (via a tv-capture card) and work with that material. You'll be able to do all the audio processing and editing on top of the video without loosing anything, and it will be so much easier.

For the capture, in your situation, I would have used XviD @ quantizer = 2. But if you're low on cpu, you might have to go for MPEG2 (it will require much more disk space though :))
