Analog source: 720x480, 4:3, 16:9 ???

I have a number of old analog VHS tapes that I want to convert to DVD. I'm NTSC, therefore I capture at 720x480 resolution. But when I convert the captured AVI to M2V, which aspect ratio is appropriate? I am using TMPGEnc. What is the difference between 4:3 and 16:9? Which is appropriate, considering my sources and destination?

Old analog VHS = 4:3 ... always ;)

VHS doesn't support 16:9 anamorphic. If you ever record a VHS in such a format (from a 16:9 DVD for example), only TVs with built-in 16:9 switcher can show them correctly (after you switch manually to 16:9 mode that is).
