I'm a noob. Have a bunch of MPEG1's...can I author them to DVD so as to play on both a regular settop player and computer. I brought them all into DVD Architect 3, but it wants to make MPEG2's out of everything?

DVD-Lab will let you do this. Scenarist 3.0 and above will too. In theory, Scenarist versions lower than 3.0 would allow this, but I tried with 2.7 and it didn't work at all. I got it to work with Scenarist 3.0 though. I had to use AC-3 audio, not LPCM and remember that the MPEG-1 video bit rate has to be below 1.856 Mbps according to the standards. Most authoring programs don't allow MPEG-1, although they really should since the format does allow it to be used. It may be that DVD Architect is yet another authoring program that only works with MPEG-2. What I find amusing is that some of the authoring programs that demand only MPEG-2 video also allow you to use MPEG audio as your only audio track for NTSC DVD when the standard allow MPEG audio only if you also have LPCM or AC3.

There are many levels of the spec, and allowing only mpeg audio for NTSC should, at most, be a warning as it will play in the vast majority of players. However, mpeg-1 video which is not in spec should not be allowed, and considered a fatal error. The spec not only limits the bitrate, but also the resolution (352x240 or 352x288). And, of course, mpeg-1 has no pulldown, so the framerate must be correct.
Authoring programs that accept mpeg-1 video written by members of the forum are MuxMan (for sure) and DvdPlanner (I think).

The next build of DVDPlanner will support MPEG1 - at the moment the IFO info is incorrect
